One of the most favoured spices, paprika can add a touch of delight to many dishes. If you are using a recipe that calls for paprika there is one important thing to remember. Hungarian paprika is generally considered to be of the highest quality and is a main ingredient in Hungarian goulash along with many other recipes. Hungarian paprika comes in eight categories. Number one is known as special quality. It is the mildest in terms of ‘hotness’ and is bright red in color. Number eight is the hottest and is a light brown to orange color. Numbers 2-7 are named and marked accordingly in order of hotness.
Smoked paprika is also readily available in varying degrees of hotness. In Spain, smoked paprika is known as pimenton, and you will often find it available under this term. Smoked paprikas generally come in sweet and mild (dulce), medium (agridulce), and very hot and spicy (picante). Which one you choose may depend on a particular recipe or your own personal taste. Look at the labels to find out how the paprika is smoked too and try out a few different brands to find your favorite. There is a lovely NZ version smoked with native Manuka that imparts a unique sweet taste. Obviously any gourmet brands are going to be a little more expensive, but if you love the taste of paprika it is probably worth it.
