The disappearance of milk producing cows makes cheese rare and increase its price. For instance cheese pizza has lately become the most expensive type of pizza because of this evolution. It is too bad for american favorite cheddar cheese. But do not count on european cheese to replace it. Swiss cheese has been heavily taxed for ages and it is not going to change. Feta cheese is a much controlled kind of cheese making it very rare and its price very high. As to italian cheese worldwide demand is so importan that it is no longer affordable. Then you had better make up your mind and forget about the old macaroni and cheese recipe that your grandmother taught you when you were a child. Sales of recipe for cheese books have already been going down for months.
So now you had better forget about cheese or turn to soy cheese. But you will have to forget about taste and texture because to be honest soy cheese has none or not a very enjoyable one actually. This all thing has a good side anyway because cheese contains a lot of fat and it is advised not to eat more than one very small part a day if you want to stay healthy and fit. So none should be OK.
